- State of the art fruit handling:
- Whole cluster pressing of white grapes in two Diemme 8000 Liter presses.
- Sorting of red fruit with BUCHER VASLIN SHAKER DELTA TRV 20 and DELTA SORTING TABLE CONVEYOR TBE 600.
- Pump free delivery of red fruit to open top fermentors.
- OR…..gentle progressive cavity pump to closed top fermentors.
- Delta E2 Destemmer capable of 10 tons per hour
- Temperature-controlled tanks
- Twenty one closed-top tanks ranging in size from 500 to 8,000 gallons
- Ten open-top red fermentation tanks 5 tons capacity each.
- Two open-top red fermentation tanks 8 tons capacity each.
- Two temperature-controlled barrel rooms for aging and barrel fermentation.
- Barrel fermentation of white wine a specialty.
- Laboratory services available.
- Highly experienced winemaker Kevin Holt and professional cellar staff
- Grape to bottle contracts preferred, but will consider itemized projects.
